Applesauce Cake


Ingredients

2 c. all-purpose flour
2 tsp. baking soda
1 tsp. baking powder
1 1/2 teaspoons cinnamon
1 tsp. nutmeg
1/3 tsp. ground cloves
1 c. raisins
1 c. chopped walnuts
1 stick butter
1 large egg
2 c. sugar
2 tsp. vanilla
2 c. applesauce
1 tbsp. confectioners' sugar (for topping)

Method

Preheat oven to 350°F.
Stir together the flour, soda, baking powder, and spices.
In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and then slowly add a portion of the dry ingredients, then a little of the applesauce, and continue alternating wet and dry ingredients, beginning and ending with dry ingredients. Add the raisins, walnuts, and vanilla at the end.
Turn into a greased and floured pan, and bake 40 to 45 minutes or until cake tests done. To test for doneness inserted toothpick into the center of the cake -- it should remain clean when removed.
Cool the cake in the pan. Dust with confectioners sugar after removing from pan, when cake is cool.

Strawberry Pretzel Dessert


Ingredients

2 c. crushed pretzels
3 tbsp. sugar
1 stick butter
1 (8 oz.) pkg. cream cheese, room temperature
1 c. sugar (powdered or regular)
12 oz. Cool Whip
2 c. boiling water
2 (3 oz.) pkgs. strawberry Jello
2 (10 oz.) pkgs. frozen strawberries


Method

Mix crushed pretzels with sugar and butter. Press into 9"x13" pan. Bake at 350 degrees for 10 minutes. Cool.
Mix cream cheese and sugar. Fold in Cool Whip. Spread over pretzel mixture.
Add frozen strawberries to hot Jello (Jello and water). Stir until strawberries thaw and Jello starts to thicken. Pour on top of rest of dessert.

Sour Cream Raisin Pie


Ingredients

  • 1 (9 inch) pie crust, baked
  • 4 1/2 teaspoons cornstarch
  • 1 1/8 cups white sugar
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground nutmeg
  • 1 1/2 cups sour cream
  • 3 egg yolks, beaten
  • 1 1/2 cups raisins
  • 1 tablespoon lemon juice
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons brown sugar
  • 1/2 teaspoon vanilla extract

Method

  1. Preheat oven to 400 degrees.
  2. In a medium saucepan, mix together cornstarch, white sugar, salt, and nutmeg. Mix in sour cream. Add egg yolks, raisins, and lemon juice. Stir until thoroughly combined. Cook mixture over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Pour mixture into pastry shell.
  3. In a large glass or metal bowl, beat together egg whites and cream of tartar until foamy. Add brown sugar 1 tablespoon at a time, continuing to beat until whites are stiff and glossy. Beat in vanilla extract. Spread evenly over raisin filling, sealing meringue to crust edges.
  4. Bake in preheated oven for 10 minutes, until delicately browned.

Impossible Pie


Ingredients

2 cups milk OR 1 2/3 cup plus 1/3 cup lemon juice
4 large eggs
3/4 cup sugar
1 1/2 teaspoon vanilla
1/2 cups baking mix/ flour
1 cup flaked or shredded coconut
1/4 cup margarine or butter, softened

Method

Heat oven to 350 degrees. Lightly butter or heavily PAM a 9- or 10-inch pie plate. For macaroon pie with a pronounced coconut layer, sprinkle the coconut in the dish, place all other ingredients in blender container. Cover and blend on high speed 15 seconds. Pour into pie plate. For coconut pie, just whiz everything in the blender.
Bake until golden brown and knife inserted in center comes out clean, 50-55 minutes. At 400 degrees it takes 20-30 min in 10" pan.
Refrigerate any leftover pie.

Fresh Strawberry Pie




Ingredients

1 baked pie shell
1 c. sugar
1 qt. strawberries
3 T. cornstarch


Method

Place 1/2 of strawberries in a saucepan. Mash, add sugar and cornstarch. Cook slowly, stirring constantly for 5 minutes until thick. Stir in lemon juice and almond extract. Let stand to cool. Add remaining whole berries. Pour into pie shell. Chill. Top with Whipped Cream.

Pumpkin Pie




Ingredients

1 large can of pumpkin
2 c. sugar
1 tsp salt
2 tsp pumpkin pie spice
1 tsp vanilla
2 c. PET milk
5 eggs slightly beaten
2 tsp cinnamon
1 tsp nutmeg
1 pie crust

Method

Mix ingredients together and pour into a 9 inch pie plate. Bake at 425 for 15 minutes and 350 degrees until set.

Perfect Peach Pie




Ingredients

1 unbaked pie shell
1 lg can of peaches (drained)
1/2 c. plus 2 T. sugar
1/4 tsp. cinnamon
1/3 c. flour
1/4 tsp. salt
1 c. sour cream


Method

Fill pie shell with peaches. Blend flour, 1/2 c. sugar and salt. Stir in sour cream and pour over peaches. Mix 2 T. sugar and cinnamon and sprinkle over pie.

Nanna's Lemon Pie




Ingredients

1/3-1/2 c. lemon and rind (1 1/2 lemons)
1 1/2 c. sugar
3 T. rounded cornstarch
3 egg yolks
1 1/2 c. boiling water
save egg whites for top


Method

  1. Preheat oven to 350 degrees .
  2. To Make Lemon Filling: In a medium saucepan, whisk together water, 1 cup sugar, and cornstarch. Stir in lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Place egg yolks in a small bowl and gradually whisk into hot sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.
  3. To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.
  4. Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Apple Crisp




Ingredients
Apples
1 c. sugar
2 c. graham crackers
1/4 c. butter
1 c. brown sugar

Method

Fill buttered pan half full with apple slices. Sprinkle with sugar and cinnamon. Mix crushed graham crackers, brown sugar and butter. Spread over the top. Bake at 350 degrees until apples are done.

Mom's Apple Pie




Ingredients

2 pie crusts
4 c. sliced tart apples
1 c. sugar
2 tsp. cinnamon
1/4 tsp nutmeg
2 T. flour
1 T. butter


Method

Pare apples; slice thin. Add sugar mixed with flour, salt and spices. Fill 9 inch pie crust. Dot with butter; add top crust. Bake at 450 degrees for 10 minutes, then 350 degrees for about 40 minutes.

Rohlicky




Ingredients

1 pkg. dry yeast (1 tbsp.)
4 c. flour
4 egg separated
1/2 c. warm water
1 c. butter
2 tsp sugar

Method

Dissolve yeast in warm water add sugar. In another bowl, mix together flour and butter. Lightly mix beaten yolks with yeast mix. Add to flour mixture and stir well. Divide dough into balls and refrigerate 1/2 hour.
Remove balls. One by one, roll out on powdered sugar to 1/4 inch thickness. Cut into sections and spread with filling. Roll each section toward point. Place on ungreased cookie sheet. Bake at 375 degrees for 15 to 20 minutes.

Filling

Beat egg whites until fluffy, slowly beat in 1 cup sugar until dissolved. Fold in ground nuts and cinnamon. You can also use a raspberry filling instead of cinnamon sugar.

Pumpkin Apple Streusel Muffins


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 cups white sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs, lightly beaten
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 cups peeled, cored and chopped apple
  • 2 tablespoons all-purpose flour
  • 1/4 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 4 teaspoons butter

Method

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease 18 muffin cups or use paper liners.
  2. In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.
  3. In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.
  4. Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean.

Cinnamon Rolls




Ingredients

1 package yeast
1/2 c. warm water
2 T. margarine
1 egg
3 T. Sugar
1/2 tsp salt
2 1/2 c. flour


Method

Dissolve yeast in warm water. Beat in sugar, salt, margarine, egg and 1 cup flour to make soft dough. Knead 2 minutes until smooth. Roll out to a 18x9 size. Brush with butter. Sprinkle with sugar and cinnamon. Let rise for 30 minutes then bake at 375 degrees for 30-35 minutes.

Zucchini Bread




Ingredients

3 eggs
1 c. oil
1 tsp. salt
1/4 tsp. baking powder
2 tsp. vanilla
1/2 c. raisins (optional)
2 c. sugar
3 tsp. cinnamon
1 tsp. soda
2 c. grated zucchini
3 c. flour


Method

Pour batter into greased baking loaf pan. Bake at 325 for 1 hour.

Grandma's Almond Rolls


Ingredients

4 c. sifted four
1 T. salt
1/4 c sugar
1 1/2 pkg yeast (dry)
2 can almond filling
1/4 c. very warm water
1 c. margarine
3 egg yolks (beaten)
1 c. milk scalded
(cooled to lukewarm)


Method

Put flour, salt, and sugar in large bowl. Cut in margarine. Dissolve yeast in very warm water, let stand 5 minutes without stirring. Combine mixture with milk, eggs and yeast. Beat well. Chill over night. Divide dough in half. Roll out to pie crust thickness. Spread with almond filling, sprinkle with cinnamon. Roll up and cut in 1 inch slices. Let rise in pan 1 hour. Bake at 350 degrees for 25 minutes. Makes 2- 8x8 inch pans.

Braided Bread


Ingredients

2 1/2 cups all-purpose flour, divided
1/4 cup white sugar
1 teaspoon salt
1 package active dry yeast
2/3 cup milk
2 tablespoons butter
2 eggs
5 whole eggs
2 tablespoons butter, melted


Method

In a large bowl, combine 1 cup flour, sugar, salt and yeast; stir well. Combine milk and butter in a small saucepan; heat until milk is warm and butter is softened but has not melted.
Gradually add the milk and butter to the flour mixture; stirring constantly. Add two eggs and 1/2 cup flour; beat well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition.
When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
Punch dough down and turn it out onto a lightly floured surface.
Divide the dough into two equal size rounds; cover and let rest for 10 minutes. Roll each round into a long roll about 36 inches long and 1 1/2 inches thick.
Using the two long pieces of dough, form a loosely braided ring, leaving spaces for the five colored eggs.
Seal the ends of the ring together and use your fingers to slide the eggs between the braids of dough.
Preheat oven to 350. Place loaf on a buttered baking sheet and cover loosely with a damp towel.
Place loaf in a warm place free from draft and allow to rise until nearly doubled in bulk, about 45 minutes.
Brush the risen loaf with melted butter (or use cream). Bake in preheated oven for 50 to 55 minutes, or until golden.

Homemade Bread




Ingredients

3/4 c. warm water
2 pkgs dry yeast
1 tsp. honey
3 T. shortening
8-9 c. flour
1/4 c. sugar
2 2/3 c. warm water


Method

Make yeast mixture with water, yeast and honey. Let rise. When ready add yeast mixture to the 2 2/3 c. water. Then add the next 3 ingredients and 5 cups of flour. Beat well until smooth. Add 3 cups more flour, plus a bit more to make dough more workable. Knead about 10 minutes or until smooth. Put in bowl and let rise until double in size. Pour in 4 greased loaf pans and let rise again. Bake at 425 degrees for 20 min.

Apple Nut Bread


Ingredients

1/2 c. margarine
1 c. sugar
2 eggs
2 T. sour milk
1 tsp. baking soda
2 c. flour
1/2 tsp. salt
1 tsp vanilla
2 c. apples
nuts


Topping

2 T. margarine
2 T. flour
2 T. sugar
1 tsp cinnamon
* mix four and margarine then add other topping ingredients*


Method

Cream margarine and sugar. Add eggs one at a time. Then add sour milk and baking soda to the mixture. Add vanilla then flour, salt, fruit, and nuts. Pour mixture into loaf pan. Bake for 1 hour at 350 degrees.

Meat Loaf




Ingredients

1 1/2 lbs ground beef
1 medium onion (chopped)
10-20 saltine crackers
2 eggs
1/2 C. ketchup
1 tsp. salt


Method

Mix ingredients and place in loaf pan. Drizzle ketchup on top. Bake at 350 degrees for 1 hour.

Baked Ham




Ingredients

1 ham
1 large can pineapple slices
1 can 7-up
1/2 cup brown sugar


Method

Place pineapple on ham using toothpicks. Mix pineapple juice, brown sugar and 7-up. Place ham in reynolds wrap baking bag. Pour juice over it. Bake about 2 hours at 350 degrees.
